The Math Behind Beef Glycemic Load
Glycemic index (GI) tells you how quickly a carbohydrate-containing food raises blood sugar compared with pure glucose, which is set at 100. But GI alone is misleading if a food is eaten in a small amount or if the dish is mostly protein. Glycemic load (GL) combines portion size with carbohydrate quality.
GL = (GI × available carbohydrate in grams) ÷ 100
